Chocolate Covered Strawberries

One of the things I love most about this time of year is the fruit.  Right now the grocery store has some beautiful strawberries.  Last week I got a little over enthusiastic with my strawberry purchasing and by the end of the week I had 6 quarts in my refrigerator. 

Since the Girls had made plans to spend Friday night with their grandparents that meant it was just L and I at the house.  On Friday afternoon I decided to use some of the extra strawberries to make a special treat, Chocolate Covered Strawberries.

On the spur of the moment L and I decided to make a trip to town Friday night.  On Saturday an early morning text changed the course of all our weekend plans (I'll have more on that later), and we completely forgot there were chocolate covered strawberries in the refrigerator.  Guess who found them?!?!  That's right!  The Girls found them...and offered to help us eat them.  They're helpful that way!

On a side note, today is my little brother JH's birthday!  Everyone smile and clap and welcome him to his 30's!!  Enjoy them, little brother, because the next not your 30's.

I don't really have a recipe.  I prefer to use Baker's Chocolate, and the amount depends on how many strawberries I want to cover at that particular time.  This time I used 5 squares (5 oz.) of chocolate to cover one dozen medium/ large strawberries.

I gently rinse my strawberries and dry them with a paper towel.  Don't submerge your strawberries in water, they absorb water and then ooze after you've covered them in chocolate.  They'll still be fine to eat, but tend to not be as pretty to look at.

If you have a double boiler you can use that to melt your chocolate.  If you don't have one you can do what I do and use a saucepan and a metal bowl.

Bring the water to a boil, place the chocolate squares in the metal bowl (I usually break them in half, they seem to melt faster that way), and place the metal bowl over the boiling water in the saucepan.

Stir the chocolate until it's melted and smooth.

Gently spoon the chocolate evenly over the strawberries and place on parchment paper.

Place them in the refrigerator to allow the chocolate to set, approximately 2 hours.
