How To Boil Eggs...And Then Make Lunch: Egg Salad Sandwiches

A favorite at my house is egg salad sandwiches.  They're quick and easy and provide a nice change from luncheon meat or pb&j's.



If you've never boiled and peeled an egg before there are a few things you should know.  If you have boiled and peeled an egg before then you already know what I'm talking about, either because someone told you or like me you had to learn the hard way.

1. Never boil fresh eggs, and by fresh eggs I mean fresh from the chicken.  Yes, in the grand scheme of things the eggs you get from the store are fresh, but for egg boiling purposes you may consider them unfresh.
2. Never boil an egg that's cracked, not even if it's just a hairline fracture.  You really shouldn't use a cracked egg for any kind of cooking, it's best to just throw it out and get another one.  But boiling a cracked egg is particularly messy.
3. Always rinse your eggs in cold water.  This is going to be what makes them easy to peel.

Place your eggs gently in a pot, cover them with cold water and place them over medium heat.  Once they've come to a boil leave them to boil 30-45 minutes.  Make sure there is enough water, more can be added if necessary.


Drain the hot water and replace it with cold water.  Repeat this process until the pot stops heating up the water and it remains cold.  Crack each egg and place it back in the cold water to set 10 minutes. 

After 10 minutes in cold water the shells should peel off with very little effort.


The eggs should be hard boiled through the center.


Egg Salad Sandwiches

12 eggs, hard boiled
1/2 tsp black pepper
3/4 tsp salt
3/4 cup Miracle Whip
1/2 cup pickle relish

Mash eggs in large bowl.  Add remaining ingredients and mix well.  Serve on toasted bread.  Refrigerate any remaining portions.

I use a homemade pickle relish and it tends to be strong.  So if you're using store bought relish you might need to add more, but be careful about adding too much juice with it since this could make your egg salad too thin.


I use a potato masher.  It works just as good on eggs and is twice as fast as cutting them with a knife.




This recipe should make 6-8 sandwiches.  Unless, of course, someone in your house also decides to throw some in a bowl and eat it with a spoon.
